Flavour of the month

Easter has it’s own traditions with the serving of Paschal Lamb, Hot Cross Buns and Simnel Cake – but sometimes there comes that craving for something a little different. So why not try these two quick and easy Easter recipes and if all else fails and you’ve discovered a few stale Hot Cross Buns after Easter – slice them thinly and use instead of bread to make a wonder bread and butter pudding.

Marzipan Eggs
250g or 500g packet of Marzipan
Food colouring - Pink, Green, Yellow, blue all work well
Caster sugar
1 Egg white - beaten
Baking Parchment

  • Shape the Marzipan into small egg shapes
  • Tint the caster sugar with a little food colouring and mix thoroughly
  • Brush the marzipan eggs with the beaten egg white
  • Roll in the coloured sugar to give a speckled appearance
  • Leave over night on baking parchment to dry.

Then give as gifts to friends or as a centre-piece on your Easter table.

Banana Hot Cross Buns
Hot cross bun
Unsalted butter - softened
Cinnamon to taste
Caster sugar
Banana - sliced

  • Split the hot cross bun in half and lightly toast
  • Mix the softened butter with the cinnamon and caster sugar
  • Spread the butter mix on the hot toasted bun
  • Top with sliced banana

Serve while the Hot Cross Buns are still hot for best effect.
